Classic Bulgarian Tarator Recipe

Tarator is a classic Balkan cold soup, usually consumed during the warm summer months.

It is delicious, light and easy to make.

The best thing about tarator is that it is made with yogurt, which makes it probiotic! Use organic and low-fat yogurt and you have a great healthy dish that could fit the requirements for sustenance of any weight loss diet without taking up all your calories.

You could enjoy your tarator at any time as a snack (especially protein snacks) in-between meals. You can have it as a stand-alone meal, as an appetizer to some méze – sliced beef jerky, salami and any other kind of meat and even as a drink.

Ingredients (6 servings)

Preparation

  1. Dice the cucumbers (or you can grate them but diced make a better tasting tarator)
  2. Combine yogurt, cucumbers, oil, garlic, dill and salt.
  3. Stir a bit until mixed.
  4. Add in two cups of water (the same amount as yogurt) while continuously stirring to mix everything well.
  5. Garnish with walnuts.
  6. Enjoy!
