Kebapche and Kyufte

One of the most traditional every day meal for a busy Bulgarian is Kebapche and/or Kyufte garnished with homemade French Fries, Lutenitsa and Cabbage Salad or Shopska Salad.

Here you will find the recipe for Kebapche, Kyufte and Cabbage Salad. This is the easiest recipe to prepare and sooo tasty.

 

Kyufte

  • 2 lbs minced meat (60% pork, 40% beef)
  • 1 onion, chopped
  • 1 tbsp salt
  • 1 tbsp pepper
  • 1 tbsp cumin

1. Add all ingredients together and mix well.
2. Leave in the fridge for 30 minutes.
3. Shape in medium-sized balls.
4. Put the balls in an oiled baking pan, flatten them a little and bake in a 375°F oven for 20 minutes.

Kebapche

  • 2 lbs minced meat (60% pork, 40% beef)
  • 1 tbsp salt
  • 1 tbsp pepper
  • 1/2 tsp cumin

1. Add all ingredients together and mix well.
2. Leave in the fridge for 30 minutes.
3. Shape in thick 5-inch long rolls.
4. Put them in an oiled baking pan, and bake in a 375°F oven for 20 minutes.

Serve them warm.

 

Cabbage salad

  • 1 lb Fresh Cabbage
  • 1/2 lb Carrots
  • Fresh Parsley
  • Salt
  • Sunflower Oil
  • Apple Vinegar

  1. Cut the cabbage in thin layers.
  2. Shred the carrots
  3. Cut the parsley
  4. Mix them all and add salt based on your own taste
  5. Smash the cabbage, carrots and parsley with hands to absorb the salt
  6. Add the vinegar, mix and then add the oil and mix again

It is really fresh salad with a lot of vitamins.

Garnish the kyufte and/or kebapche.
