Samardala is truly a Bulgarian spice.
Samardala is so endemic to Bulgaria that its Latin name is Allium bulgaricum. Its taste is similar to the one of chives but it is very unique. It is one of the main ingredients in Bulgarian traditional sharena salt (colorful salt).
Fresh samardala leaves can be used to flavor almost any salad with tomatoes and cucumbers and the table salt samardala mix can be added to stews with potatoes, eggs, feta cheese or lamb.
