Thyme grows almost anywhere in Bulgaria, domestic and wild, and as such is one of the favorite spices of Bulgarians.
It finds variety of uses as a spice and herb. It has a subtle, dry aroma and a slightly minty flavor. Bulgarians include thyme in seasoning blends for poultry and stuffing. It goes well with fish sauces, soup, lamb and veal as well as in eggs, custards, and croquettes. Mix it with parsley and bey leaf and you get a great spice mix for any type of soup and stew.
Thyme is rich source of potassium, iron, calcium, manganese, magnesium, and selenium. It helps controlling heart rate and blood pressure and it is very good antioxidant.
